SAKA MUSEUM RECEIVES LEADING GLOBAL DESIGN AWARD
Bali, Indonesia (14 November 2024) – SAKA Museum, AYANA Bali’s innovative cultural hub and knowledge center committed to preserving and promoting the island’s vibrant living heritage, has been named among the Top 100 in this year’s Kyoto Global Design Awards. The museum’s interior designers, Napp Studio & Architects, were recognized in the Environmental Design category, which emphasizes a project’s harmonious integration with its natural surroundings. The honor comes just three months after SAKA Museum was included in Time Magazine’s World’s Greatest Places 2024.
The Kyoto Global Design Awards recognize excellence across diverse design fields, spotlighting projects that excel in both aesthetics and environmental responsibility. Hong Kong-based Napp Studio & Architects designed SAKA Museum – their biggest project to date – to reflect Bali’s distinct spiritual and cultural landscape with a state-of-the-art approach. Their captivating interior translates traditional Balinese Hindu philosophies and motifs with a contemporary yet timeless appeal, which speaks to both local and international audiences across generations.
Co-founders Aron Tsang and Wesley Ho drew on Nyepi, the island’s annual Day of Silence, to guide visitors through a serene, introspective experience. The museum’s lobby features a dark, subtly lit ceiling resembling the constellations of Bali’s night sky. The space transitions to a soft glow at sunset, when 3,000 LED lights begin to twinkle, an effect achieved through a carefully arranged grid of lights that ingeniously conceals structural elements and fixtures.
Napp Studio & Architects maximized the use of local materials such as gray granite flooring and volcanic rock to harmonize with Bali’s natural landscape, reduce the project’s environmental footprint, and strengthen ties to the community. “Our design aimed to capture the essence of Nyepi, using lighting, local materials, and a color palette that invites calm reflection, forming spaces that aren’t fixed but are open to personal interpretation,” said the studio’s co-founders.
“We’ve received numerous industry awards for our individual concepts, but this is the first time we’ve received recognition for environmental design, which demonstrates that our approach to sustainability and incorporating local elements is on the right track,” they continued.
Meanwhile, SAKA Museum’s Knowledge Center, a resource and artifact hub for conservationists, artists, researchers and students, was designed in a warmer palette evoking a wooden chest. The only one of its kind on the island, the Knowledge Center strengthens AYANA Bali’s mission of celebrating Bali’s cultural identity and encouraging deeper engagement with all its aspects in a modern environment.

THE ICONIC ROCK BAR INTRODUCES SUSTAINABLE COCKTAIL MENU INSPIRED BY THE INDIAN OCEAN
Bali, Indonesia (October 14, 2024) – Rock Bar, one of the globe’s most popular sunset, cocktail and entertainment venues, proudly unveils its new sustainable cocktail menu, designed by recently appointed Head Mixologist, Simone Merchese. The innovative menu, launched in celebration of Rock Bar’s 15th anniversary, pays tribute to Bali’s awe-inspiring natural environment – particularly the iconic Indian Ocean and sunsets experienced at Rock Bar.
With over ten years of experience working at some of the finest cocktail bars in London and France, including Soho House and Paris Society, Marchese brings a wealth of knowledge and expertise to the role. In 2023, he was named among France’s top 100 bartenders by COCKTAILSPIRITS, a premier French–Japanese guide and event that brings together industry professionals from around the globe to explore and shape the future of the bar industry.
Now bringing his talents to Rock Bar, guests are invited to embark on a sensory voyage through masterfully crafted cocktails highlighting fresh, local ingredients and sustainable practices. Marchese’s creations go beyond flavor, embodying a zero-waste philosophy by ensuring that every element of the ingredients is used in some form. “My personal style is simple and efficient—using familiar ingredients but working with them in an innovative way,” says Marchese. “I always aim to eliminate waste, which is why this new menu is so special to me.”
Furthering AYANA Bali’s commitment to sustainability, the new set of signature cocktails uses every part of each ingredient and includes several ingredients sourced fresh from the property itself, nearby at AYANA Farm. When it comes to taste, Marchese drew inspiration from the rich flavors and vibrant ingredients of the countries bordering the Indian Ocean, including of course Indonesia, as well as China, Korea, and even the Tanzanian archipelago of Zanzibar. From seaweed and flower petals to tropical fruits and warm spices, each drink reflects the dynamic essence of the region while also being eco-friendly.
One standout cocktail is Notoro, inspired by Lake Notoro in Hokkaido, Japan. Featuring El Jimador Tequila, nori, and moringa, the concoction offers an umami-rich, herbal experience that mirrors the scenic beauty of the lake, known for its vibrant red and gold patches of coral grass in autumn. “Notoro is the cocktail that best represents Rock Bar,” says Marchese. “Thanks to the nori, you can feel the sea in every sip. We perfected our sustainability principles with the moringa, which is used in a cordial and then dehydrated and powdered as a garnish.”
Another highlight is Dragon Sunset, a vivid, refreshing cocktail inspired by the spectacular sunset viewed from the dragon fruit and rose petal plantations in Song Nam, Vietnam. Blended with gin and Cointreau, these ingredients create striking purple and white hues. “We use the whole dragon fruit, including the skin, because of its health benefits and herbal taste,” Marchese adds, reinforcing the zero-waste approach behind the menu. Meanwhile, Dala Spritz, inspired by a garden in China, contains Aperol infused with tomato, basil, and olives. The tomato is then dehydrated for garnishes.
For those seeking alcohol-free alternatives, Rock Bar’s menu also features a selection of sustainable mocktails, including the refreshing Nom Tom. This mocktail draws inspiration from traditional Thai coconut dumplings, called khanom tom, blending mint and coconut for a zesty tropical treat that honors the flavors of the region.

Ubud, Bali, September 19, 2024 — Syrco BASÈ, the pioneering culinary hub north of Ubud helmed by two Michelin-starred chef, Syrco Bakker, is proud to announce that its Bar Manager achieved a history-making second-place finish at the recent Diageo WORLD CLASS Global Bartender 2024. Hailing from Buleleng in North Bali, I Putu Aris Sanjaya Putra is the first Indonesian to be awarded a top spot at the world’s largest bartending competition, which in its 15th year saw bartenders from 44 countries compete in Shanghai, China, from September 9 to 12. Aris is also the first Indonesian to make it to the final round of the competition.
Diageo WORLD CLASS recognizes industry professionals for the creativity of their drinks, exceptional preparation techniques, hospitality, professionalism, and commitment to continuous learning. In the final round, eight contestants were asked to set up a pop-up bar featuring six cocktails representing a particular concept. Aris’ concept, which he called “Roots to Flower”, was inspired by the life cycle of plants. His six outstanding concoctions used every element of several plants, from the roots, stems, and leaves to flowers, fruits, and even the bark of the mesoyi tree, a relative of cinnamon.
With Syrco BASÈ’s core principles of transparency, nature, and traceability, Aris’ innovative approach to ingredient use is reflected in each of the restaurant’s alcoholic and non-alcoholic beverages, which are carefully curated to pair perfectly with its cuisine, which weaves tradition and innovation into every dish. After the culinary hub’s triumphant debut in Indonesia’s dining scene at the beginning of this year, it has already been listed among Bali’s 20 best restaurants by major Australian media outlet, Traveller.
In addition to taking out the podium position, Aris also received the WORLD CLASS People’s Choice Award, after his pop-up bar was chosen as the favorite among all the contestants’ offerings by most of the 700 competition attendees. In an interview with local media outlet NusaBali.com, the champion bartender said his advice for local aspiring mixologists is “to be as original as possible and just be yourself”. He also enthuses that beyond the island’s burgeoning mixology scene, elements of Balinese culture can also offer inspiration for mixing drinks.

Bartender, Wisnu Arcana, is about to showcase his skills and love of Indonesian ingredients at the Global Finals of the Giffard West Cup in France from September 23 to 26. This follows Assistant Bar Manager, Arya Dharmayasa, along with Bartenders A.A. Putra and Zieshen Giovanni, receiving second place in the Indonesian final of Campari Red Hands Asia 2024. Meanwhile, Stefan de Graaf, Head of Culinary Services, is a contender in the regional finals of the San Pellegrino Young Chef Academy Competition, held between September 2024 and January 2025.

Ubud, Bali, June 19, 2024 — After its triumphant debut in Indonesia’s dining scene at the beginning of this year, Syrco BASÈ, the pioneering culinary hub north of Ubud helmed by two Michelin-starred chef, Syrco Bakker, is set to unveil its new menus. Responding to the shifting season while sharpening its focus on Bali’s artisans and the archipelago’s diverse food traditions, the new menus reaffirm Syrco BASÈ’s commitment to transparency, nature and traceability.
At the culinary hub’s flagship venue, Syrco BASÈ Ku, just 14 guests are guided by Chef Syrco through a three-hour epicurean journey that transcends dining to create a singular gastronomic experience. Open evenings twice a week, the intimate space in earthy tones of sage green and hazelnut brown overlooks the edible garden, providing the ultimate “playground” for the world-renowned chef to demonstrate his culinary philosophy and masterful prowess. Ku is where he connects deeply with guests while meticulously assembling each culinary moment, and sharing the stories of the people and the places behind each one.
For Ku’s new menu, the Syrco BASÈ family has created the gastronomic manifestation of its compelling story and core pillars. Throughout the dining experience, 18 culinary moments are served across six chapters, beginning with Traditions and Bali Heroes, and concluding with The Future and Indulgence. Guests can expect exquisite moments such as GROUPER (aloe vera, sambal ijo, garden blooms), which evokes the tranquil hues of Monet’s Water Lilies, and TUNA (tomato, ginger, walnut), summoning the soothing precision of a Japanese Zen garden.
Commenting on the new 18-moment menu, Chef Syrco explains, “While Ku’s inaugural concept was an ode to Bali’s incredible artisans, products and customs, the new one has been greatly expanded to tell our evolving story. From our respect for local traditions, culture and religion and our harmonious collaborations, to our constant research and development processes and desire to surprise and delight, the new menu ultimately showcases on the plate how we are living our core values and beliefs.”
Within the terracotta walls and elegant wood paneling of Syrco BASÈ Restaurant — a sophisticated yet sociable two-floor sanctum with a seating capacity for 50 — the three new menus put the best of Bali on the table, along with innovative testaments to Indonesia’s diverse culinary traditions. Both alcoholic and 0% pairing has been expertly formulated for Ku and the Restaurant to present the region’s most outstanding libations. Meanwhile, fine wine pairing is under the expert guidance of sommelier Noa Tanghe, who was part of Chef Syrco’s team at his former establishment, Pure C, in the Netherlands.
The Bali Heroes concept comprises eight moments honoring the island’s revered traditions, from vivid marigolds used in daily offerings to the gods, to tantalizing freshwater snails foraged from nearby rice fields, which for centuries have been a valuable source of protein for Bali’s agrarian communities. “The best local products from Bali are prepared with respect to make them shine and emphasize the commitment and artisanship of our deeply valued producers and specialists,” says Chef Syrco.
In the Plant BASÈ menu, the richness and diversity of Bali’s fertile soils are captured in nine plant-based moments. When developing the new concept, the Syrco BASÈ family thoroughly researched and connected with the local area’s long history of natural remedies, known in old Balinese as ‘ubad’, from which the town of Ubud takes its name. Guests can look forward to moments such as PAPAYA, combining the abundant local fruit with young coconut, curry leaf, coconut yoghurt and tempe.
“With the new concept, we wanted to highlight the health-giving properties this fertile region offers us in every herb, fruit, plant, flower, and vegetable, including those grown in our garden,” adds Chef Syrco.
The Heritage concept is a Michelin-starred celebration of both beloved and little-known Balinese and Indonesian traditions, inspired by the countless flavors and textures prepared by generations of home cooks across the country. The star of the new menu is the red thread uniting the nation’s 1,300 ethnic groups, the crucial component of almost every Indonesian meal: sambal.

SYRCO BASÈ ANNOUNCES ITS INAUGURAL SERIES OF LOCAL AND INTERNATIONAL COLLABORATIONS: COLLECTION I
Ubud, Bali, 25 March 2024 — Syrco BASÈ, the pioneering culinary hub north of Ubud helmed by two Michelin-starred chef, Syrco Bakker, is already making its mark on Indonesia’s dining scene just two months after its official opening. Alongside his seasoned, multicultural team of chefs, sommeliers, mixologists, architects, artists, and designers, Chef Syrco is showcasing the importance of respectful partnerships with suppliers and strong relationships with local communities throughout each of the culinary hub’s five distinct areas. Affirming this philosophy and with diverse collaborations at its heart, Syrco BASÈ is excited to announce its inaugural series of local and international collaborative events: COLLECTION I.
Kicking off on 26 March at 7pm, Bali’s most revered beach club and sustainability trailblazer, Potato Head, will be joining the team of Syrco BASÈ Bar for an evening devoted to Indonesia’s innovative mixology scene and hospitality industry heroes. Overlooking an emerald rice field, seating for 20 guests encircles the central bar and live kitchen, providing the ideal stage for individual expertise and inspired collaboration.
Potato Head’s talented bartenders will be heading over from Seminyak to exhibit their imaginative approach to sustainable cocktails, perfectly paired with Syrco BASÈ’s indigenous-inspired ingredients, many of which are sourced directly from the culinary hub’s garden. As the creative village and community hub of Potato Head is renowned for hosting Indonesia and the world’s most in-demand artists, music will play a vital role throughout the event. For the full spectrum of each team’s masterful skills and ingenuity, guests will also be able to experience Syrco BASÈ Bar’s bites to pair with the cocktail tasting selection.
On 4 April, history will be made in Bali as Syrco Bakker is joined by fellow two Michelin-starred chef, Nick Bril from The Jane in Antwerp, Belgium. Coming in at no. 39 on the World’s 50 Best Restaurants 2023 list, the Michelin Guide describes The Jane as “a designer-inspired culinary temple” that is lauded for its sophisticated and highly skilled cooking. After the two world class chefs seek inspiration while visiting a local permaculture gardener and wild food forager, diners can embark on an exclusive and edifying culinary journey with drinks pairing from 5.00pm to 8.00pm at Syrco BASE Ku, the culinary hub’s intimate, immersive space for a maximum of 12 guests.
Later in the evening from 7:00pm, Chef Nick will be demonstrating both his culinary and musical prowess at Syrco BASÈ Bar. To bring balance to his life as a chef, Nick has also built a career as a reputable DJ, playing up to 50 sets at major festivals in Belgium and internationally each year. After presenting a menu of bar food and cocktails specially created with the Syrco BASÈ team, he’ll hit the decks until late for an unforgettable dining and dancing experience.
On 17 April at Syrco BASÈ Bar, four of Bali’s most esteemed mixologists will be joining forces to celebrate the island’s vibrant cocktail culture, which is imbued with Indonesia’s extraordinary wealth of native ingredients and time-honored fermentation techniques. For this Local Heroes event, representing Apéritif will be award-winning bartender Panji Wisrawan, who will showcase cocktails crafted with artisanal spirits and infusions. Flying the flag for Mozaic will be Billy Wirawan, a master of indigenous flavors and exquisitely crafted libations. They will be joined by Esy Triana, who presides over the bar at Night Rooster, ingeniously blending heritage ingredients for show-stopping concoctions. Finally, Syrco BASÈ’s very own Bar Supervisor, Arya Dharmayasa, will be crafting drinks inspired by authentic flavors and traditions.
On 28 May, Syrco BASÈ will collaborate with the creative team behind Singapore’s Stay Gold Flamingo, which last year made its debut on the Asia’s 50 Best Bars list at an impressive no. 32. Founder & Creative Director, Jerrold Khoo, will be bringing his flair and passion for combining Japanese and American styles of bartending, which has placed him at the vanguard of Singapore’s cocktail evolution. Meanwhile, Stay Gold Flamingo’s Head Chef, Joanne Sakai, will blend her Filipino heritage with bold flavors to create culinary masterpieces certain to surprise and delight. When the two teams unite, guests can expect a lively evening of maximum flavor, high energy flair, playfulness and meticulous attention to detail.
